Power Breakfast

Ingredients
1 tomato
1 avocado
1 hard boiled egg
hot sauce (optional)
salt and pepper

I love this power breakfast because I can prepare the hard boiled eggs, ahead of time. I use my Instant Pot to make hard boil eggs using the 5-5-5 method. It’s easy and the eggs comes out perfect; in addition, they are easy to peel. I usually make about 6 hard boiled eggs. I store in a zip lock bag and last in the refrigerator for days.

I slice the tomato and I get about 4 to 6 good slices depending on the how thick I slice them and how big the tomatoes are.

I slice the avocado in half, remove the pit, and scoop it out and spread it evenly on top of the tomato.

I take one hard boiled egg, slice it, and place it on top of the avocado.

I lightly season it with salt and pepper. Depending on my mood, I dab with hot sauce on top.
