Willie Mae is a New Orleans institution located in the neighborhood of Treme, on the corner of St. Ann Street and North Tonti Street. There is something about their chicken, it’s delicious, and unforgettable. They received a James Beard award for best fried chicken. There is usually a line to get in, so come early.
This is wet batter chicken; however, it is marinated prior. My guess is the marinate is Crystal hot sauce base with some added herbs and spices, and the batter is cornstarch and buttermilk which it light and crispy. I may be wrong, but that’s just my guess. When you order the chicken, don’t forget to order the red beans and rice or the butter beans.
